Farm Fresh Baby Carrot Haystacks

Make these yummy, fresh carrot haystacks!

Cook Time: Refrigerate until serving
Makes: 12 haystacks

Ingredients

  • 4 cups grated baby carrots, uncooked (large grated matchstick)
  • 3/4 cup poppy seed dressing

Supplies

  • Foil baking cups
  • Ice cream scoop
  • Measuring cups
  • Mixing spoon
  • Serving dish
  • Small containers

Directions

  1. Add shredded carrots to mixing bowl with the poppy seed dressing.
  2. Mix the carrots and dressing together.
  3. Refrigerate and chill.
  4. Use an ice cream scoop to fill baking cups with “hay"

  

Tip: If you want to get a little creative, cover the outside of small plastic cups with foil to resemble tiny pails that you can serve your haystacks in! Pop a wooden spoon in to represent a tiny barnyard pitchfork.
