Ingredients
- 6-8 crepes
- 1 ¼ cups finely chopped cooked spinach, drained with stems removed
- ¼ cup Parmesan cheese, grated or shredded
- 1 ¼ cups shredded Swiss cheese (substitute mozzarella if your Sproutlet likes it better!)
- 3 tbsp. skim milk
- 3 tbsp. olive oil (to brush tops with)

Directions
Breakfast in bed, a picnic brunch in the yard, or before dinner appetizers? Any way you serve them, these heart-shaped crepes made a special dish to share with the Sprouts you love any time of day!
- Pre-make crepes according to your favorite recipe, or save time and purchase prepared crepes in your local market (you may have to ask for help finding them, but many grocery stores now sell pre-packaged crepes in a package similar to tortillas). Measure all of your ingredients and set out in small containers for your big kitchen helper Sproutlet to add.
- Use a heart shaped cookie cutter to create hearts out of your crepes! You’ll need about 20 hearts. If you plan to make smaller crepe stacks and stack them higher, make more as you go along!
- Work with your Sproutlet to add the spinach, shredded cheese, grated Parmesan, and the milk in a mixing bowl. Double the recipe if you plan to make very tall stacks! Mix by hand and transfer to a cooking pot. This way, your child can do most of the creating, while a grown-up Sprout takes over at the stovetop!
- A grown-up Sprout can cook the cheese and spinach in a pot on low to medium heat until the mixture comes to a slow rolling boil. Continue to cook and stir for about 10 minutes, or until the mixture looks like gooey green slime ( This will make the prep time even more fun!). Let cool to room temperature.
- Start with one crepe heart layer on the bottom. Add about 1 tablespoon of filling, spreading evenly out to the edges with clean fingers or with the back of a spoon. Top with a crepe, add filling and top with another crepe. Repeat. You’ll need about 5 layers for the crepes to look stacked but you can stack them as high as you like!
- Brush tops of crepes with a little olive oil to keep them from drying out. Warm in the oven for 5 minutes if desired. If you cook them too long the filling will run out the sides! If they lose their shape, let cool to touch and re-cut with cookie cutter.
- These crepes taste great served warm, cold or at room temperature and will just the perfect way to say “Be My Valentine.”
