Ingredients
- 1 carrot
- 2 scallions, thinly sliced
- 1 red pepper
- 2 tsp. soy sauce
- 1⁄2 tsp. powdered or fresh ginger
- 1 pineapple
- 2 tbsp. vegetable oil
- Thinly sliced fruit for decoration
Supplies

- Mixing bowl

- Wok or large frying pan
- Heat-proof mixing spoon

Directions
- Cut carrot, scallions and pepper lengthwise into fine strips, all roughly the same thickness.
- Mix vegetables in a bowl and add soy sauce and ginger. Encourage children to help mix the ingredients with a wooden spoon.
- Take pineapple and cut the top off (but don't discard). Using a pineapple corer, core pineapple, discard core and cut remaining fresh pineapple into inch cubes.
- Take a wok (or a large frying pan), add vegetable oil and heat until very hot.
- Add the vegetable mixture and stir fry for about 5 minutes until cooked (but not too floppy).
- Carefully add the cubed pineapple and cook for 2 to 3 more minutes.
- Place the pineapple shell onto a large plate and put the cooked vegetable and pineapple stir fry into the shell.
- Put the pineapple lid back on and allow children to help decorate the plate with some colorful sliced fruit on either side to make look like a fruit bowl.
- Take the plate to the table and watch your kids go "wow" as the lid is taken off the pineapple.
*Time-saving tip: Use store-bought pre-grated carrots.
*Mealtime tip: To make a meal out of Stir Fry Surprise, serve with brown rice or chicken!
*Remember to keep children away from hot stoves and sharp cooking utensils. While parents handle all the cutting and cooking, preschoolers can help mix the ingredients, decorate the plate, and be in on the surprise.
