Ingredients
For hummus:
- 14 ounces can chickpeas
- 2 tablespoons tahini paste
- 1/4 cup water
- 2 cloves garlic
- 2 tablespoons lemon juice
- 1 tablespoon extra virgin olive oil
For fries:
- 4 large potatoes, washed
- 1 tablespoon extra virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
Directions
To make the hummus:
- Drain and rinse chickpeas.
- In a food processor, puree chickpeas, tahini, water and garlic until it forms a paste.
- Add remaining ingredients and process until smooth and creamy.
- Add more water if necessary. Taste and adjust seasoning if necessary.
To make the fries and tower:
- Line a large oven tray with parchment paper.
- Cut potatoes into half-inch-thick chips.
- In a large bowl, combine olive oil, ground cumin, coriander and turmeric.
- Add potatoes, tossing to evenly coat.
- Arrange potato chips on the prepared oven tray.
- Bake at 400 degrees Fahrenheit for 30 minutes or until chips are cooked through and golden.
- Allow potato chips to cool on countertop before building into a tower.
- Spread fries with hummus to “cement” together and build into a tower.
