- Cutting board and knife
- 2-quart pot
- 9 x 11 cake pan sprayed with cooking spray
Ingredients
- 3 lbs. sweet potatoes peeled and cooked until soft
- ¼ cup brown sugar, packed
- ¼ cup orange juice
- 1 tsp cinnamon
- 1 Tbsp. butter or trans fat free margarine, melted
- 1 cup graham crackers crushed into crumbs
- Cooking spray
Directions
- Preheat oven to 350º.
- Mash potatoes until smooth.
- Add butter, brown sugar, orange juice, and cinnamon and mix until blended.
- Spread out in cake pan.
- Sprinkle graham cracker crumbs over top.
- Place in oven for 30 minutes or until bubbling.
- Let cool slightly before serving.
Note: This is one for parents to take the lead. Kids can help with mixing ingredients into potatoes prior to baking, but only if the potatoes have cooled.
